Baked Oatmeal
A different take to your traditional oatmeal. It’s good cold and warm! By: Kate Mayberry
Ingredients:
• 4 cups quick oats
• 2 cups vanilla almond milk or any milk (I like the vanilla flavor)
• ½ cup maple syrup or honey
• ¼ cup plain greek yogurt or applesauce or mashed banana
• ¼ cup coconut oil melted or avocado oil
• 2 eggs
• 1 tsp vanilla extract
• 1 tsp baking powder
• ½ tsp sea salt
• 1 tsp cinnamon
• ½ tsp nutmeg
• ¼ tsp ground ginger
• 3 apples chopped
Directions:
I also add 2 tablespoons chia seeds- more fiber
Chop apple and mix with extra cinnamon and 2 tablespoons brown sugar (not included in ingredients above)
Mix oats, eggs, milk, all dry ingredients and spices and maple syrup in bowl
Dump in greased casserole dish 9x13
Top with chopped apple mixture and press down into oats
Bake 350 for 30 - 35 mins
