Summer Salad
A light refreshing salad that the whole family will love!

Ingredients:
Arugula
Diced fresh mozzarella
Diced apricots
Diced cucumbers
Thinly sliced marinated onions
Chopped pistachios
Roasted chicken thighs with herbs (oregano, rosemary, thyme, basil and olive oil)
Marinated onion vinaigrette
Toss your chicken with olive oil, herbs of your choice and salt/pepper. Roast your chicken at 400 degrees for 40 mins. At the end, broil the chicken for about 2 mins to get a little bit of color on them. While the chicken cooks, make your marinated onions.
For the marinades onions thinly slice a red onion. Put them in a bowl with 1/4 cup olive oil, 1/2 cup red wine vinegar, salt, pepper and a tablespoon of oregano. Let them marinate for 40 mins while the chicken cooks. This mixture will also be your salad dressing!
Assemble your salad and top with the marinate onion vinaigrette!
