Sausage and Sun Dried Tomato Soup
It’s super easy and quick…great way to keep bellies warm on a wintery day!

Ingredients:
1 pound Italian sausage (pork or chicken) crumbled or chopped if using links
3 tablespoons olive oil
1 large onion, chopped
4 cloves of garlic, minced
1 teaspoon salt
1 teaspoons red chili flakes
1 teaspoon black pepper
1 teaspoon oregano
1/2 cup sun dried tomatoes, chopped
6 cups chicken stock
6 cups kale, chopped (stems removed) OR baby spinach
1 cup heavy cream
1/4 cup parmesan cheese
Fresh chopped parsley for serving
Directions:
In a soup pot, brown the sausage. Next add the onions, garlic, olive oil and spices to the pot with the browned sausage. Sauté this mixture for 5 minutes or until the onions are translucent. Next add the sun-dried tomatoes and cook for another minute or 2.
Add the chicken stock and bring to a boil. Once its boiling turn the heat down to low. Add the chopped kale, the heavy cream and finally the Parmesan. Cook on low for 20 minutes until the kale has wilted. Serve with parsley and some Parmesan on top!
