Corn Salad

The famous social media, cowboy caviar! This is our take on the corn and veg summer salad.

Yield: ~3-4 servings

Prep time: 15 minutes | Cook Time: 5 Minutes | Total time: 20 minutes

Ingredients:

  • 2 ears of sweet white corn

  • 1 large cucumber

  • 1/2 red onion

  • 1 avocado

  • 1 bunch of cilantro

  • handful of grape tomatoes (about 6-8)

  • 1 bell pepper (use red, yellow or orange for a pop of color!)

  • drizzle of olive oil

  • salt and pepper to taste

  • Nonna Pia’s balsamic glaze

All you have to do in finely dice all your vegetables. I judged the size of my cuts based off the kernels from the corn. I like when all the vegetables are about the same bite size!

Once it is chopped, you will mix it all together with olive oil, salt, pepper and balsamic glaze and garnish with cilantro.

If you are making this for a bigger crowd or need more protein, I recommend adding a black bean or garbanzo bean (chickpea) to the mix!
